Maremma

The Maremma is famous for its rich and varied ecosystems, from the rocky coastlines to the sandy beaches, the rich famlands and golden plain, to the green hills and thick wooded forest mountains.

Just as special is the food of the region, which is simple and traditional, made from local, seasonal produce, often with a glass of the excellent local wines. Meals feature beef, boar, chestnuts, truffels, pecorino cheese, the local olive oils, the white wine from Pitigliano, and the famous Acquacotta soup dish. Many of these recipes are centuries old, from the tables of farmers and herders of the region, with roots that go back even further to Roman and Etruscan times.

Capalbio has a number of fine restaurants, including Trattoria da Maria outside the gate to the old town, and Ristorante Tullio a bit further down the street. Trattoria il Chinghiale in Borgo Carige at the bottom of the hill is also excellent if the other two are booked. And they can be, so reserve a table!
